La Pacita’s Egg cracklet crackers are one of the top 10 favorite Pinoy biscuits. It is a square-shaped egg cracker with a shiny, yellow surface and characteristic up-turned corners. It is known to have several names; a direct translation of egg crackers is galletas de huevos, galletas de patatas as perhaps in reference to its bottom, and tengang daga. It is best known to be sold under the name “egg cracklets” by La Pacita Bakery Bakery of Antipolo, Philippines. The galletas are a little flavorless, with a bit of an eggy flavor, but is actually making you have another bite of it especially the slightly browner ones. As you bite onto its crisp, tough edges, the cracker yields to compact, chalky interior. Other brands of galletas seem to be hollow and less chalky. Still, it’s a good idea to have a glass of water or soda on hand when you eat galletas to wash down the crumbs.
